I think one of the main performance problems is drivers, which NVidia
pretty much updates for Windows on a per game basis.

I ran a MAME cabinet on Mandrake Linux for a while and at the time,
driver updates were nightmarish Root/Terminall affiars with cryptic
commands. I'm pretty familiar with DOS, and still struggled with it
even though I felt I had a grasp on the principle. I eventually
abandoned ship and went with a stripped down version of Windows XP on
the arcade cabinet.

Valve getting heavily involved now along with the newest builds of
Linux allowing software updates from the GUI (this is huge even though
I haven't tried it) are the first big things that have happened in a
long time. I believe the PS4 operating system is also Linux based,
though heavily customized with Sonys own Direct X type of environment.
