In Doom1.wad (shareware), Doom.wad (DOOM) and Doom2.wad (DOOM II) all the status bar graphics are lumps named ST*, and the face graphics in particular are named STF*. With XWE and WinTex you can press the Gfx button so that the WAD browser will display graphics only, making it easier to find the face graphics. You'll see there's a button for sprites as well, but the face isn't really categorized as a sprite (in DOOM sprites are technically the things you see moving in the levels or decorating them, as well as the marine's hands and weapons in hand).
