No i znalazłem rozwiązanie.
Tu jest opisany ten bug i jego rozwiązanie jeśli by ktoś kiedyś potrzebował

Ale znalazłem za to podobny bug (?)

$(function() {
	$("#resizable").resizable({
		handles: 's'
	});
	$('#resizable').resizable('option', 'handles', 'e');
});

Powinno się dać skalować diva tylko poprzez 'uchwyt' z prawej strony, 
ale się nie da. Tak jakby ignorował zmianę "handles".
