Inca CD - How do I kill those Spanish Galleons?

I don't think these are any spoilers, but the overly-sensitive might think
so, so...

I'm getting close to the end, but I keep getting killed trying to fight those
Spanish galleons.  I've tried shooting them straight on with both kinds
of missile, but that doesn't seem to work.  If I try to hit them while they're
turned broadside to me, I get toasted by the cannonballs.  What do I need
to do to kill them off?
