How do I play this game in the future if I grab it now? Do I log into
Amazon? Into Twitch? Do I get a Steam Key if I grab the game? I am
just trying to figure out if jumping through hoops is worth it in this
case.

I had already bought the game on Steam a few weeks ago when it went on sale (haven't played it yet though because backlog) so I can't answer your question with certainty but it seems that once you claim them they'll be linked to your Twitch/Amazon account and you'll still be able play when the offer ends and even if your account's prime membership is cancelled. Probably a GOG type deal, DRM free/own it forever type thing.

As I said you can simply get a free trial membership, download the game and see for yourself - nothing to lose there. I'll definitely be getting Banner Saga 2 come March 2nd, I hear it's far better than the first one in every way.
