I don't know if I would consider NFS:SE the best, but it is certainly a contender. Personally, I have /very/ fond memories of NFS3 (and NFS5: Porsche Unleashed was nothing to sneeze at either). The first game has probably aged the best, however; it might have had huge pixels, but for some reason I find that less visually offensive than the odd angles and low-res textures of the later game's low-polygon models. It's definitely worth a revisit, although it can be a bit finicky to get working on DOSBox (recommendation: use machine=svga_paradise settings in DOSBox and load UniVBE - remember Univbe? - first) But some of my favorite racing moments are from that game: racing down the nearly straight highways of the City track, zooming along the winding roads through the pine forests and under the train-tracks on the Alpine track, or cresting the ridge and seeing a valley filled with hot-air balloons on the Coastal track. Pretty decent soundtrack too.
