I'd go with Knights of the Old Republic II or Jedi Knight: Dark Forces.
The former is a bit rough around the edges but otherwise has everything
that made the original KotOR a great game.  I prefered Jedi Knight:
DF over Jedi Knight: Outcast, though the graphics are noticibly more
primitive.  You might also want to try the original Dark Forces game,
but it gets pretty hard at the end, so I've never managed to finish it.
