In some cases you'll see benchmarks on the exact same hardware -- a Mac running OSX versus same Mac running Windows. However, there's no DirectX on OSX so the best hope for optimization in to optimize for OpenGL, and that almost never turns out as well as DirectX. For Linux, there are a lot of benchmark articles out there that compare games on same hardware. Linux gets stomped by Windows, of course.
