I think it varies a lot with server population and AH supply/demand - on Horde, I never bother selling greens and find blues a struggle to get rid of - tons of supply there, so it's hard to sell stuff. I've been playing my Alliance alts lately (same server, but it has a huge population bias towards Horde), and am quite happily selling greens with half decent stats - because the supply is limited, and what's up is all 100g plus, which I think ridiculous for levelling greens; so I list at 10-20g and they sell easily! On the flipside, I can easily sell cooked food on Horde, lots of raiders wanting the buffs. Nobody's interested on Alliance (the last big raiding guilds transferred off in free migration a couple of weeks back...)
