According to the MK comic book that Midway put out early last year, Shang Tsung is kept young by killing his opponents and sucking their souls. Shang has been around for a very long time, and his apparent age is directly related to whether he's been sucking souls and appeasing his gods recently. More details from the comic book while I'm at it: 500 years ago, Shang Tsung entered the tournament of the Sans. He was undefeated for a long time, killing his opponents and sucking their souls. Finally, he was defeated by a Shaolin monk named Kung Lao. A few years later, an aged Shang brought an outworlder named Goro to the tournament, and Goro defeated Kung Lao. Shang took over the tournament for an endless supply of souls for his hunger. The comic then shifts to the present day and describes how the seven each came to the tournament: Liu Kang is a monk trying to uncorrupt the old tournament, Raiden gets invited by Shang Tsung, Cage goes for the competition, Kano is running from Sonya, Subzilla wants to assassinate Shang Tsung, Scorpion wants revernge against SubZero. So, Goro is naturally long-lived, and Shang stays young by stealing souls. What I don't understand from this is how Kung Lao could exist at the same time as the other modern characters.
