I'll second prboom, though; it resembles the original .exes to the point where it can play most demos recorded for them. It also has high resolution and all of the enhancements contained in Boom. http://prboom.sf.net/ There's also Chocolate Doom, which is fairly recent and seeks to reproduce the behaviour of the .exes as closely as possible.
